Recipe for mayonnaise with just fresh, raw ingredients?

I'm entering a cooking competition and I have to use fresh, raw ingredients for everything and I need to know how to make mayonnaise from scratch with the fresh and raw ingredients for the food. Is there any recipe anyone knows of? Pleeease help!Recipe for mayonnaise with just fresh, raw ingredients?
If you're entering a raw cooking competition, you can't use eggs, so you can't make mayonaise. A raw diet excludes all animal products. You also can't make aioli because it's a French mayonaise type sauce and has the same type of base as mayonaise. You can use some oils but they have to be cold- pressed or substitute avacado if that works in your recipe.Depending on what you're doing, you can substitute a spread such as hummus for mayo but that won't work in many instances. again, avacado, because of it's texture, would work in some recipes. Pureed salsa (homemade) is another option. There is alot of information online about raw diets and substitutions. Google your ingredient "raw diet substitution for add your ingredient" and Google will help. I did this with mayonaise and came up with this recipe:

Almonnaise

Adapted from the recipe in Marilyn Diamond's book "Fit For Life"



陆 cup raw almonds

陆 to 戮 cup water

1 tsp nutritional yeast

1 or 2 garlic cloves, crushed

戮 tsp salt

1 tsp herbal seasoning

1 to 1 录 cup oil (I like to use 1/2 an avocado instead)

3 tbs lemon juice

陆 tsp apple cider vinegar



Grind almonds in coffee grinder to a fine powder. Transfer almonds to blender and add half the water along with yeast, garlic, salt and seasoning. Blend well, then add remaining water to form smooth cream.



With blender on low, remove insert in top and drizzle in the oil in a thin stream until mixture is thick.



Keep blender running and add lemon juice and vinegar. Blend on low for one more minute, to allow mixture to thicken.



Refrigerate tightly sealed..

Very easy with a stick blender or food processor. There are thousands of recipes and videos on the internet. I do think that if you don't know how to make mayonnaise, you shouldn't be entering a cookery competition. its oil and egg, with a little flavoring and acid... oil isn't considered raw or fresh



you could make a aioli, by just taking some raw egg and add some fresh herbs and garlic i guess.
