Me and my girlfriend had a discussion about eggs and if they are still raw after they have been used in Icing. No heat is being used so they are not cooked but the other ingrediants in the recipe make chemical changes to the egg white and I was arguing they are not longer raw. Is there a name for that? What is food when its no longer raw but not cooked?
Probably the best example of that is CEVICHE ... where the raw fish is put into lime juice. The citric acid in the lime "cooks" the fish after a while ... I'm sure there's a proper scientific name for that, but don't know what it is:)What is food when its no longer raw but not cooked?
If an egg is not cooked, its raw no matter what you put it in. I like malted with egg and although it's combined with ice cream and other ingredients doesn't make the egg cooked, it may change the taste and consistency but not the fact that the egg hasn't been cooked. So, the name for it is a raw egg, lololol.
Eggs do however help emulsify the rest of the ingredients in the recipe. What is food when its no longer raw but not cooked?
Not sure but I think the term you are looking for is Emulsifying.. by whipping an egg white and adding salt or sugar, it creates heat and makes meringue. What is food when its no longer raw but not cooked?
A whipped egg white is still raw no matter what until you add something very hot to it. Then it would be considered "cooked".
yup its still raw, just in an other form, hence why frosting needs to be chilled.
