Parsley Red Potatoes (6 servings)
2 lbs. red potatoes
1 1/2 teaspoons salt
1/3 cup butter, cubed
2 tablespoons minced fresh parsley
Peel off a strip around each potato if desired (presentation). Place in large saucepan; cover with water. Add salt. Bring to boil; reduce heat. Cover and cook 15 minutes or until tender; drain. Add butter and parsley; toss until butter is melted.
Glazed Carrot Coins (4 servings)
2 tablespoons butter
2 tablespoons brown sugar
2 tablespoons orange juice
1/4 teaspoon salt
1/4 teaspoon ground ginger
1/8 teaspoon ground cinnamon
6 medium carrots, cut into 1/2-inch slices
In small saucepan, melt butter over medium heat. Stir in the brown sugar, orange juice, salt, ginger and cinnamon. Add the carrots; cover and cook 20 to 25 minutes or until tender, stirring occasionally.
Oriental Beef 'n Noodle Bowl (6 cups)
1/2 lb. thin beef strips for stir-fry
1 package McCormick/Shilling Brown Gravy Mix
4 cups water
1 1/2 cups sliced mushrooms
1 cup shredded carrots
1/4 cup soy sauce
1/2 teaspoon hot sauce
2 oz. (about 1/4 cup) angel hair or thin spaghetti
1/4 cup chopped green onion
Coat 3-quart saucepan with cooking spray. Add beef and cook over medium heat 3 to 4 minutes.
Mix in remaining ingredients except pasta and onion. Bring to boil; simmer, uncovered, 5 minutes.
Add pasta; cook 5 minutes longer. Stir in onion just before serving.
(I guess you might want to leave the green onion out, as it wouldn't be cooked just before serving.)
Chinese Kitchen Main-Dish Soup (6 cups)
1/2 cup chopped onion
1 medium clove garlic, minced
1/2 teaspoon ground ginger
2 tablespoons butter or margarine
2 cans Campbell's Chicken with Rice Soup
1 soup can water
2 cups diced cooked chicken
1 package (6 oz.) frozen snow peas
1 tablespoon soy sauce
In large saucepan, cook onion with garlic and ginger in butter until tender. Add remaining ingredients. Cook over low heat 5 minutes or until done; stir occasionally. Serve with additional soy sauce.Healthy, but yummy, food recipes?

its a good thing that you want to start eating healthy that will for sure help you! im sorry to hear about your allergies though, but thats still ok since ther are other fruits and you could eat cooked vegetables!!
When i get home after school im usually really hungry so i eat different kinds of fruit in a cup or a bowl. You can choose your favorite fruits and chop them up and enjoy! =) I found out that the fruit tastes better when you eat it with a toothpick....dnt ask why i guess it just looks prettier and its fun to eat!

how about a nice omlette? Chicken/chorizo/onion?
fry some veg- peppers, onion, mushrooms- if you can eat cooked veg?
Add some beaten eggs -seasoned with salt and pepper.
cook on the bottom and then i sometimes put under the grill to cook the top. you can add some grated cheese :-)
