its very difficult to make good recipes on a budget. its easier to eat simply 5 days a week, then make something yummy once or twice a week. alissa cohen's book is very good. the raw food talk forum is the best place ive found for discovering recipes.
its much cheaper to eat a wholefood cooked vegan diet - no processed food, just real natural foods. beans, lentils, chickpeas, wholegrain brown rice, millet, quinoa, fruit, veg, berries, greens, nuts, seeds.
grains and legumes are much cheaper than meat and fake meats. you have to cook them. but you could eat the fruit, nuts, seeds, greens, and most of the veg raw.

try rawfoodreceipes.com. i tried this diet - its not bad, you will loose weight but it can play havoc with your digestive system. the best thing i found was to add sauces to food to spice them up a bit - otherwise it can get pretty boring. sweet chillie dipping sauce was my favourite one on salads. BTW my hubby is on a drastically changed diet for the same reasons as you. we changed to food with no fat - I'm on the diet as well (not very fair to him if i eat a plate of chips and give him a baked spud) so far in two weeks i have lose 4lbs and hubby has lost 10lbs. if you dont get on with the raw food diet then maybe consider cutting out ALL fat from your food and see how you get on.
