What are some good recipes you can freeze and then reheat?

I'd like to cook on the weekends, especially for my husband since I eat about 75% raw food and he doesn't. What are some good recipes I can cook on the weekend and then freeze in single portion size so its easy for me or him to reheat it? Please keep in mind he doesn't eat pork, broccoli, or beans. : )What are some good recipes you can freeze and then reheat?
Halbut Baked with Tomato Fennel Sauce for the Freezer

Servings: 6

Ingredients: 1 1/2 pounds halibut filets



Sauce:

1 tablespoon olive oil

2-3 garlic cloves, minced

3/4 cup chopped fresh fennel, white part of bulb only

3/4 cup chopped onion

1 can (14 1/2 ounces) diced tomatoes, undrained

1/3 cup red wine

1/4 teaspoon crushed red pepper (more if you like things hot)

salt and pepper to taste

Instructions: Preheat oven to 375掳 F. Prepare side dish, such as rice or couscous, if desired.





Prepare sauce by heating olive oil in a large saut茅 pan. Add garlic, fennel and onion and saut茅 until soft, but not brown, about 5-7 minutes. Add diced tomatoes and red wine. Simmer sauce for about 20 minutes. Let cool completely.



Divide side dish vegetable between six freezer containers. Lay fish fillet on bed of rice, couscous or other vegetable. Divide the sauce over the six containers, pouring over the fish. Cook in oven for 10 minutes. Cool, wrap properly and freeze.



When you're ready to eat dinner, here's how to cook your fish:



Conventional Oven: Preheat oven to 350掳F and place baking dish on a cookie sheet. Bake, covered for 20 minutes, remove cover and continue cooking until heated through and fish flakes with a fork -- about 10-15 more minutes.



Microwave Oven: Microwave on high for 5-7 minutes or until fully cooked. Let stand for 1-2 minutes in microwave oven before serving



French Bread Pizzas for the Freezer

Ingredients: Per Pizza:

1/3 cup pizza sauce

6 slices low fat beef and turkey pepperoni

2 tablespoons grated mozzarella cheese

1 teaspoon grated Parmesan cheese

one half long French roll

Instructions: Cut each roll in half. Spread 1/3 cup sauce over the cut side of each roll, sprinkle with grated cheeses and top with pepperoni and other desired optional toppings. Wrap each pizza tightly in foil or other freezer wrap of choice and freeze.



When you're ready to eat dinner, here's how to cook your pizzas:



Conventional Oven: Preheat oven to 350掳F and place unwrapped pizza on a baking sheet. Bake for about 20-25 minutes or until heated through and cheese is melted.



Microwave Oven: I like this recipe best when cooked in a conventional oven, as it's difficult, if not impossible to get a crisp crust in the microwave (maybe you have better luck with browning trays then I). But if you must cook in the microwave, 2 1/2 to 3 minutes on high usually does the trick.



Spaghetti and Meatballs

Servings: 8

Ingredients: Meatballs:

1 pound ground beef

3/4 pound ground pork

3 cloves garlic, minced

2 handfuls of bread crumbs

2 tablespoons dried basil

2-3 handfuls of freshly grated Parmesan cheese

2 eggs

salt and pepper to taste



Sauce:

1 tablespoon olive oil

1 small onion, chopped

1-2 cloves garlic, minced

2 cans (6 ounces each) tomato paste

1 can (15 ounces) tomato sauce

6 tomato paste cans (36 ounces) water

salt and pepper

2 tablespoons dried basil

1 tablespoon dried oregano

1/2 cup freshly grated Parmesan cheese

Instructions: For Meatballs

Mix all ingredients together in a bowl. Use hands to thoroughly mix everything together. Form meatballs, approximately 1 1/2" in diameter, by rolling between your palms. If meat mixture is too wet or sticky, add more bread crumbs to the mix. Makes 35-40 meatballs.





For Sauce

Heat oil, onion and garlic. Carefully remove garlic and onion and put in large saucepan. Add water, tomato sauce and tomato paste to garlic and onion. Mix well. Add basil, oregano, and salt and pepper to taste. Add Parmesan cheese and bring to a boil. Reduce heat and simmer. Makes enough sauce for two family size servings (family size = 4 adults or 2 adults and 4 children with leftovers).



The Meal

Bring sauce and meatballs to a boil over medium-high heat. Reduce heat to low and simmer for 90 minutes. Meatballs can be simmered as long as 3 hours, the longer they are simmered the better. Fifteen minutes before meatballs are done, cook spaghetti noodles according to package directions. Remove meatballs with a slotted spoon and place in a warm serving dish; set aside. When noodles are done, drain and rinse according to package directions. Pour noodles into serving bowl and toss with a couple of handfuls of freshly grated Parmesan cheese. This adds not only a wonderful flavor to your spaghetti, but it also helps hold the sauce on the noodles. Add enough sauce to coat but do not make your spaghetti swim! Any pasta dish, such as lasagna or macaroni and cheese, are excellent from the freezer to the microwave. You can make a whole pan, let it cool and cut individual portions, wrap in plastic wrap and then foil. I place the individual portions in a gallon freezer bag labeled with the contents. You can do the same with things like soups and stews, put them in the right size container, take it out the night before and set it in the fridge, he can microwave it for 2-3 minutes and eat it with bread and maybe a salad.

i'm a vegan though so my bias would be to say using durum wheat sheets , vegetables like bell pepper, spinach, mushrooms, tomatoes, a nice n perhaps spicy pasta sauce, maybe olives, and vegan cheese if you really want. add tofu with spinach to make like a vegan cannelloni



any bake like pasta bake, shepards pie, cottage pie

all can be made veggie or vegan if you want to, peas and other veg of choice, soy chunky, veggie gravey topped with baked thin layer of mashed potato and cheese if you wish/sauce and non eggy pasta





chilli and rice-easy to find recipes online



fillings for burritos-just mix up tofu/soy mince or meat if need be with veggies, seasoning, tomato puree etc, leave in the fridge and cupboard for him tortilla wraps and cheese and tell him all he needs to do is defrost and heat the filling, add it to tortilla wraps, top with cheese and heat again



veggie burgers or nuts roasts-made out of vegetables, nuts, soy protein, tofu, quorn...various ingredients... fully cook in oven then tell him to microwave and put in a bun/bap with a little lettuce and sauce like BBQ, ketchup, relish etc.... and some frozen chips, would be hard for him to bake these! or potato wedgies. You could roast your own and freeze for him to microwave if you don't like store bought stuff.
