You can make hummus out of dried garbanzo beans instead of the ones from the can, which are cooked in a way. Both the dried and the canned ones are really cheap. Just soak the dried beans under a few inches of water overnight until they are soft and use them as you would the canned beans.

You can find a hummus recipe with video in this post about falafel and hummus;

You can eat hummus with carrots (which are really cheap), cucumber slices, or celery.

Enjoy!

Stuffed peppers. Yumm. :)

A single red pepper if it's just for one person

Rice. Instant rice works fine, it's really cheap.

Zucchini

Grape tomatoes

mushrooms (Canned or fresh. Personally I prefer all fresh, but boxed/canned works fine)

Onions, if you like.

Broccili (Should be frozen from before, this way you don't need to do anything to it)

Any other vegetables.

Put in a pot on the stove top with a lid and some water for steam. Takes twenty minutes. You know it's done when the pepper is soft.

Keep all your scraps from your cut up vegetables for a stir fry.

Add simulated chicken broth for falvor when steaming, if you like.

Tasty, had it just tonight for dinner.
