I have recently been introduced to the raw food diet, and am considering eating vegan food two weeks / then raw vegan food the next two on and off. but what I really wanted was too get some really nice simple recipes that are cheap and not to expensive.
Also what are the health benefits of this diet?.

Sprouting and dehydrating has nothing to do with losing/gaining weight. Sprouting is growing your own sprouts, like alfalfa sprouts, radish sprouts, etc. Dehydrating is cooking but on a very low temperature, so it is still considered raw. It is somewhat equivalent to letting something dry out in the sun. There are special boxes/machines that will dehydrate food faster than just setting it outside.
At the very least, to be raw you need a good food processor and a blender. It can be challenging to be raw without one.
I like to borrow cookbooks from the library to save on cost and so I don't end up purchasing something I never use. My favorite raw cookbooks:

have you ever tried RAW banana ice cream? its delish and easy!
ingredients:
bananas
optional:
raw cacao ( the stuff they make chocolate from ! )
peanut butter
maple syrup
first you have to get some bananas and make sure their just right then peel them break them in half and freeze them in the freezer. when they are frozen run them through a juicer and it comes out exactly like soft serve ice cream. then you can put the optional things on top and its spectacular! :)
plus if you live in the metro detroit area try the red pepper deli and the zen budest cafe! both are completely raw and cool restaurants!

Basically the best is make your own hummus to taste. I use cooked chickpeas (i suppose you could soak them for a long time and make 'em raw, but never tried), raw onions, raw garlic and lemon, salt and black pepper, in a blender. This makes veggies very tasty and gives you added protein.
Also guacomole, avocado and salsa mixed together.

Im not all that sure if this is vegan but it tastes very sweet delicious and cheap. Take nutella,( you can get it in the peanut butter isle) peanut butter, and syrup and put it on a piece of bread.
Go get a copy of RAW: The UnCook Book, by Juliano. It's good for inspiration, at least. I don't think I could go raw at this point in my life (I lack some of the equipment for making more involved recipes), but it is fun.
I'm a fan of gazapacho. You can also make guacamole and dunk in veggies. I have done veggie "pasta" (basically, you thinly slice summer squash or zucchini into long strips with a vegetable peeler) with tomato sauce, too.
