Food Network Meatloaf recipe = HELP!!!!!!!?

Ok - someone else asked this question about 7 months ago - but no one was able to help. I hope this time, someone has the answer. August/September 2006 food network had an episode of "Secret Life of... Comfort Foods" A guy had a recipe for meatloaf that included oatmeal instead of breadcrumbs and called for covering the meatloaf with raw bacon before putting it in the oven to keep it extra moist. Darn food network never posted the recipe for it though!!!!! Does someone know the recipe - or have you seen the show recently and remember what else you put in this meatloaf? All these other recipes for meatloaf look wonderful.



However, I believe the reason food network.com doesn't have the recipe listed is because they have a link to the comfort diner's website - and the meatloaf recipe is there. And now it's here:



The Comfort Diner's Meatloaf

Five years before opening his first Comfort Diner, Ira Freehof tasted the most incredible meatloaf he had ever experienced. Though he steadfastly refuses to identify the source, he persuaded the person who cooked it for him to share the recipe, then tucked it away and patiently waited to unleash it on the New York City dining population. When he did, in 1996, it met with peerless praise, such as that from Gourmet magazine's David Rosengarten, who called it "devastatingly delicious." Among its tricks are the inclusion of pork and the use of oatmeal instead of bread crumbs to retain as much moisture as possible.

Servings: 6

? 1 pound ground beef 80% lean

? 8 ounces ground veal

? 8 ounces ground pork (Note: A "meatloaf variety" pack of beef pork and veal may be used.)

? 2 large eggs, at room temperature

? 1 cup milk

? 1 cup oatmeal

? 1/2 cup canned peeled tomatoes, drained and roughly chopped

? 1/3 cup finely diced celery

? 1/2 cup finely diced onion

? 1 clove garlic, minced

? 1 tablespoon dried basil

? 1 tablespoon dried thyme

? 1 tablespoon dried oregano

? 1 teaspoon coarse salt

? 1 teaspoon freshly ground black pepper

? Mushroom Gravy (recipe follows)

1. Preheat the oven to 425 degrees F.

2. In a large bowl thoroughly combine the beef, pork, and veal. In a separate bowl, beat the eggs, and then stir in the milk and oats. Pour the egg mixture into the meat mixture and combine thoroughly. Add the remaining ingredients and combine again until fully incorporated.

3. Form into a loaf in a roasting pan and bake for 45 to 50 minutes.

4. Remove to a platter and keep warm while making the mushroom gravy. (Note: Be sure to reserve 1/2 cup drippings for the gravy.)

Mushroom Gravy

? 1 1/2 cups water

? 1/2 cup drippings from the meatloaf

? 1/4 cup all-purpose flour

? 4 large button mushrooms, thinly sliced

? Coarse salt and freshly ground black pepper to taste

1. Pour the water into the meatloaf's roasting pan and stir and scrape with a wooden spoon or whisk to loosen the browned bits at the bottom.

2. Pour the reserved meatloaf drippings into a 2-quart saucepan and warm over medium heat. Gradually stir in the flour until smooth. Add the sliced mushrooms and cook, stirring constantly, until mixture is slightly browned, 4 to 5 minutes.

3. Slowly stir in the liquid from the roasting pan and cook, stirring, until thickened. Season with salt and pepper to taste.Food Network Meatloaf recipe = HELP!!!!!!!?
This is one I found but It's not from the food network show you were talking about. May be close though.



Meatloaf:

1 1/2 pounds 85% lean ground beef

1 cup Quaker? Oats (quick or old fashioned, uncooked)

1/4 cup finely chopped onion

1 large egg, lightly beaten

1 can (8 ounces) tomato sauce

1/2 teaspoon black pepper



Secret Sauce:

1/3 cup mayonnaise

2 tablespoons catsup



Toppings:

8 large (about 4 x 6-inch each) slices cheddar cheese

8 strips thick-sliced bacon, crisp-cooked and halved

2 medium tomatoes, sliced

8 hamburger buns or other favorite roll or bread, split and toasted (optional)



1. Heat oven to 350°F. Spray 13” x 9” metal baking pan with cooking spray.

2. For meatloaf, combine all meatloaf ingredients in large bowl; mix lightly but thoroughly. Press mixture into pan.

3. Bake 30 to 35 minutes or until meatloaf is to medium doneness (160°F) and center is no longer pink. Drain off any juices. Heat broiler.

4. For secret sauce, combine ingredients in small bowl; mix well. Spread over hot meatloaf, completely covering; cut meatloaf into 8 rectangles. (Do not remove from pan.) Top each rectangle with cheese, 2 half pieces bacon and tomato slices.

5. Broil meatloaf 5 to 6 inches from heat source 2 to 3 minutes or until cheese melts. Serve, if desired, on bun or bread.
A Firefighter's Meatloaf

INGREDIENTS



* 2 slices whole wheat bread

* 2 pounds ground beef

* 1 green onion, chopped

* 2 tablespoons chopped onion

* 1 cup medium salsa

* 2 tablespoons whole grain Dijon mustard

* 1 teaspoon Worcestershire sauce

* 2 tablespoons minced garlic

* salt and pepper to taste

* 1 tablespoon barbeque sauce



DIRECTIONS



1. Preheat the oven to 375 degrees F (190 degrees C).

2. Soak the bread in warm water in a small bowl. Place the beef in a large bowl. Drain bread and add to beef along with green onion, onion, salsa, Dijon mustard, Worcestershire sauce, garlic, salt and pepper. Mix by hand until well blended. Form into a loaf and place in a greased loaf pan.

3. Bake for 1 hour in the preheated oven. Drain off excess fat and top with barbeque (Diana) sauce. Return to the oven and bake for an additional 15 minutes.Food Network Meatloaf recipe = HELP!!!!!!!?
Try putting some grated Parmesan cheese and BBQ sauce.

1 pound ground beef

1 1/4 teaspoons salt

1/4 teaspoon ground black pepper

1/2 cup chopped onion

1/2 cup chopped bell pepper

1 egg, lightly beaten

8 ounces canned diced tomatoes with juice

1/2 cup quick-cooking oats

Topping:

1/3 cup ketchup

2 tablespoons brown sugar

1 tablespoon prepared mustard





Preheat oven to 375 degrees F.

Mix all meatloaf ingredients well and place in a baking dish. Shape into a loaf.



Topping:

Mix ingredients for topping and spread on loaf. Bake for 1 hour



Or here is another...good luck, hope one of these works

FEELING YOU OATS MEATLOAF



2 lbs. burger

2 lg. onions

2 eggs

2 c. oatmeal

1 tbsp. dry parsley

1 to 2 c. tomato sauce

Salt and pepper to taste

1 lg. or 2 smaller loaves



Finely chop onion, mix all ingredients, add tomato sauce to make the loaf the right consistency. Bake at 375 degrees until done. Serve this with mashed potatoes and a green vegetable.



I also sometimes use crushed saltine crackers instead of the bread crumbs
Basic Meat Loaf

1 1/2 pounds ground beef

1/2 cup dry bread crumbs

1 large egg

1 cup milk

1/4 cup chopped onion

1 teaspoon salt

1/2 teaspoon dry mustard

1/4 teaspoon pepper

1/4 teaspoon sage

1/8 teaspoon garlic powder

1 tablespoon Worcestershire sauce

1/2 cup tomato ketchup

1/2 cup prepared barbecue sauce

2 tablespoons water



Mix together ground beef, dry bread crumbs, egg, milk, chopped onion, salt, dry mustard, pepper, sage, garlic powder, and Worcestershire sauce. Spoon into an ungreased loaf pan and top with ketchup. Bake, uncovered, for 1 to 1 1/4 hours, or until done; drain.

When cool, cut into 1/2-inch slices.

Combine prepared barbecue sauce and water in a skillet. Place slices of meatloaf in the skillet, turning to coat all sides with the barbecue sauce. Cover and cook over low heat, basting occasionally, about 10 minutes.

Makes 6 servings.



Best Ever Meat Loaf

3 pounds ground chuck

1 pound ground mild sausage

5 slices lean bacon

1 cup oatmeal or 1 1/2 cups crushed cornflakes

1 large onion, diced

1 large green pepper, diced

1 large red pepper, diced

1 (10-ounce) can condensed tomato soup, undiluted

1 cup ketchup

1 1/2 teaspoons salt

1 teaspoon pepper

2 tablespoons prepared horseradish

1/2 cup ketchup

Preheat oven to 350*F (175*C).

Lightly mix all the above ingredients, except for the 1/2 cup ketchup, in a large mixing bowl.

Spread the 1/2 cup ketchup in the bottom of a 13 x 9 x 2-inch baking pan.

Shape meat loaf and place in the prepared baking pan. Lay the bacon strips on top of the meat loaf.

Bake, uncovered, for 1 hour and 45 minutes. Allow meat loaf to sit for 10 minutes before serving.

Makes 12 servings.



Best Meatloaf

2 pounds ground beef

1/3 cup chopped peeled onion

3 tablespoons chopped fresh parsley

1 1/4 teaspoons chili powder

3 cloves garlic, crushed

1 1/4 teaspoons ground sage

1 1/4 teaspoons salt

1 teaspoon ground black pepper

3/4 cup milk

2 large eggs

1/4 cup Worchestershire sauce

2/3 cup bread crumbs

4 slices bacon

1/4 cup tomato ketchup

2 tablespoons firmly packed brown sugar

1 teaspoon salt

1 teaspoon dry mustard

1/2 teaspoon ground black pepper

Combine the first 8 ingredients in a medium bowl.

In a large bowl, combine milk ,eggs and Worcestershire sauce. Mix in beef mixture. Add bread crumbs.

Grease a large sheet of aluminum foil, place bacon on foil. Mold mixture over bacon. Refrigerate 2 hours, or over night.

Preheat oven to 350°F (175°C).

Place meatloaf on a cookie sheet and bake for 1 hour.

Combine ketchup, brown sugar, salt, mustard and pepper. Open foil , drain any juice. Spoon ketchup mixture over meatloaf and bake, uncovered, an additional 30 minutes. Serve immediately.

Makes 6 servings.
