Quesadillas.
Seriously, i'm an absolutely bloody rubbish cook and i find these way too easy. I make them for when my mates come round for a snack after College.
How to make one-
Get some uncooked, soft flour tortilla wraps. Lay them both out in front of you. Get some jarred salsa (any kind of chilli, tomato salsa that you keep in the fridge) and spread thickly over one tortilla.
Grate some cheese (cheddar's the best, but any will do) and sprinkle generously over the salsa.
If you can, get some chopped up parsley and scatter over as well, this tastes really good.
Place the other flour tortilla over the topped one, and then place in a hot pan (with NO oil in, just a dry pan). Let it warm and crisp up slightly, only a few minutes. Flip over (easier to do than you think!) and proceed to heat on that side as well.
Then, simply cut into wedges and serve with guacamole/sour cream/anything you can find.
Really filling, tasty and just so easy to make.
They should look something like this- http://www.whats-cooking.ca/Grilled_ques鈥?/a>
Hope they enjoy whatever you cook for them x)I'm having mates over for lunch and I'm not the best cook so i need simple recipes?
Try doing a brunch then, which would involve you cooking some eggs, some toast, some bacon and sausages, hash browns and a fruit salad. Easy stuff. You could also get some sweet rolls, like muffins and danish and serve on a nice plate.
you could always do a salad %26amp; pizza! or buy ready meals that you could microwave - marks %26amp; spencers do some fancy onesI'm having mates over for lunch and I'm not the best cook so i need simple recipes?

try a simple chicken or salmon (smoked or grilled) salad. simply chop up the veg not to fine and lay on top some precooked cold chicken or lightly pepper/salt the salmon and grill it for 10-17 minutes. then lay it on top of the salad. simple but very tasty and satisfying
How about enchiladas? Corn tortillas, minced beef, enchilada sauce, cheese. You can even buy an enchilada kit! They're easy to make-just cook the mince, add a little of the enchilada sauce to it,then roll the mince mixture in the corn tortillas (you can use flour tortillas if you can't find corn),arrange them in a baking dish, pour the rest of the enchilada sauce over it,sprinkle some cheese over the top, bake in the oven until cheese is melted and bubbling. Serve with mexican rice (you can get that in a microwave pack) and salad. Delish!

Arugula Corn Salad with Bacon
-4 large ears of corn
-2 cups of chopped arugula (about one bunch)
-4 strips of bacon, cooked, chopped
-1/3 cup chopped green onions
-1 Tbsp olive oil
-1 Tbsp white wine vinegar
-1/8 teaspoon ground cumin
Salt and freshly ground black pepper to taste
1. Cook the corn ears, in their husks, either on the grill for a smokey flavor, or by steaming in a large covered stock pot with an inch of boiling water at the bottom of the pot, for 12-15 minutes. Let the corn cool (can run under cold water to speed up the cooling), remove the husks and silk. I recommend cooking the corn in the husks for the added flavor that the husks impart. If you boil or steam the corn ears after you've already husked them, or if you cook them in the microwave, reduce the cooking time by a few minutes.
2.To remove the kernels from the cobs, stand a corn cob vertically over a large, shallow bowl. Use a sharp knife to make long, downward strokes, removing the kernels from the cob, as you work your way around the cob. Note: it may help to work over a low table, to be in a better ergonomic position to cut the cobs this way.
3. In a medium sized bowl, mix together the corn, chopped arugula, bacon, and onions. In a separate bowl, whisk together the oil, vinegar, salt and pepper, and cumin. Mix dressing into salad just before serving. Taste and add more vinegar if necessary to balance the sweetness of the corn.
*Enjoy!
