I think you've answered your own question! Grill some sliced vegetables and put them out...I'd suggest fairly thin sliced potato, sweet potato, zucchini, onion, largish mushrooms, and halved tomatoes (better get the vine ones for safety!). Toss each in some olive oil, then lay out on grill (the potato first, then the onion, then the zucchini and mushrooms, and tomato last), sprinkling with a little salt and pepper. Grill each until they are tender but not falling apart of mushy.
If you want to add a bit more flavor, toss all in a tiny bit of vinaigrette for a chic grill salad.
