hi everybody! I was wondering if anyone had any yummy tofu recipes/ideas they could share with me! Here are the main requirements of the dishes i'm looking for...
1. They cannot be cooked (as in baked, fried, boiled, etc.) unless using a microwave.
2. They have to include basic ingredients like any of the following: beans, cheese, lettuce, spinach, corn, carrots, rice, fruit, tomatoes, any other basic veggies, salsa, etc. (just no spices or anything)
3. They cannot require cutting or prepping in any way. My tofu will already be cut into squares, and everything available to me will already be cooked or set out raw.
I only have access to these foods and a microwave where I live (in a college dorm) so I am hoping for some cool yet easy tofu recipes!! Thanks!Easy tofu recipes that are microwavable or raw?

Chocolate Tofu Pudding

1 pound soft silken tofu
2 tablespoons cocoa
1/4 teaspoon salt
1/3-1/2 cup maple syrup
1 teaspoon vanilla
Place all ingredients into a blender and process until completely smooth. Spoon into small bowls and chill before serving.
Edit: Sorry, I missed the part about you being in the college dorms. I wondered if that was the case. I guess you are grabbing whatever is available from the cafeteria salad bar. That is a good idea, but you need to pick up just a few groceries as well.
If you do not have a refrigerator, please get a bottle of Sriracha sauce or something similar which does not require refrigeration after being opened. If it were me, I would have to keep some basic seasonings in my dorm room. I love tofu, but it has no taste on its own.
As others have suggested, you can mix up any combination of tofu and veggies with noodles, rice, or potatoes. Have on hand a few cans of chickpeas, black beans, and other legumes for the days you are not eating tofu.

Drain your tofu and squash out the water by putting a wooden cutting board and a weight ( a huge jar of pickles or something like) on them.
Add soysauce, a can of drained corn, black beans, chickpeas, some diced onion ( buy it diced) and some herbs- basil, rosemary go well with soysauce. Add a little oil and black pepper, then a can of diced pineapple, drain it first. Mix together and eat like that- the beans and pineapple with onion become a pico, and the tofu when pressed out, becomes rich and chewier. It's lovely.
Rice- make rice in the MW. Add black beans when cooked, some curry power, and diced tofu.
Baked potato with MW tofu, sour cream, avocado and salsa- self explanatory.
Tofu and noodle soup. Make buckwheat ( not crappy ) noodles. in the MW.
Add soaked hijiki ( soak it in lemonade, or plain water for 1/2 hour. Five minutes is OK time to soak, but longer is ideal)- add the softened hijiki ( it is so amazing, tastes like black nutty pasta) and MW carrots, bean sprouts and a few frozen peas. Add the veg to the noodles with the hijiki, and then put the tofu on top. Douse with a little peanut sauce (* add peanut butter and soysauce, and mix).Easy tofu recipes that are microwavable or raw?
Tricky question, very tricky. The first thing that springs to mind is how bad it would be to microwave tofu as it is so delicate. All I can come up with is a salad of pre-prepared whatever, ready marinated tofu and some kind of dressing with no zapping at all.
You could heat up a pre prepared curry sauce or coconut milk and Thai curry paste, or Indian such as Korma, and add the tofu for the last few minutes and have with microwaveable rice? You could add veggies such as peas and corn.
This is really hard.
How about soup? Heat noodles,tofu and stock and throw in some bean sprouts for the last minute.

A few months ago I saw this book at the bookstore that sounds perfect for you - The Starving Students' Vegetarian Cookbook. There is also the PETA's Vegan College Cookbook. You should try to find them and see if you like their recipes. I'm sure there are others. I know there are microwave cookbooks. They might make them for vegetarians as well. You could do a search on Amazon.
Can you not cut or prep stuff because you don't have a counter or because you aren't allowed to have a knife? Because I had a really small room in the barracks, but my roommate and I managed to cook in there. All we were provided with was a microwave and fridge, but we got some other stuff from Bed, Bath, and Beyond. We got a small cutting board, a knife, a Crock Pot, one of those plug-in hot water heaters (like an electric tea kettle), and an electric (plug-in) griddle. We could cook just about everything in there. (Although we couldn't bake, obviously.) If I had had my way, we would have had a rice cooker too, but there isn't much point in having a slow cooker and a rice cooker. Of course, we had to hide all of the electrical appliances, seeing as how the Marine Corps considers them to be fire hazards, but what they didn't know didn't hurt them. So anyways, we had very limited space, but we managed to cook everything from burgers to pancakes.
You can actually use your microwave as a counter space. A cutting board doesn't have to be big. Ours was annoyingly small.
