Anybody have any good simple raw food recipes? I'm trying to go at least 70% raw and 100% vegan but I'm having trouble trying to figure out what to eat for dinner. I need something with lots of nuts and vegetables but All I can think of is salad. It's not very tasty and pretty boring. What can I do?I'm having trouble going Raw. Help?

Smoothies, Raw Food Bars, Salad, Lettuce Wraps, etc. Here are some simple ideas: (Since you're not going completely raw, I may include some ideas that are not totally raw at the bottom.)

You can make a yummy salad with just cucumbers and onions; Slice a cucumber into half-circle slice, same with the onion. Just add a bit of oil, lemon juice, salt, sugar, and vinegar.

Make raw veggie burgers, you can find loads of recipes online.

Cut cucumbers %26amp;%26amp; tomato into small cubes. Add some salt, oil, and lemon juice.

Make a tasty cole slaw; just make the dressing with salt, sugar, lemon juice, and a bit of oil instead of mayo.

Buy those pre-shredded carrots, or you could shred your own. Add some raisins/craisins, orange juice, sugar, etc. Add flavour according to taste. This is actually really good, and can be a salad or dessert.

You can take veggies like broccoli, cauliflower, carrots, spinach, green beans, peppers, sugar snap peas, etc. and eat then with your favourite dipping sauce.

Bean salad- Take whatever beans you like, a couple kinds is good. Chop celery, carrots, onion, peppers, and flavour w/salt, lemon juice, oil, and whatever spices you enjoy. I like to make it a bit spicy :)

Hearts of Palm Salad- Hearts of Palm, black olives, carrots, onion, celery, peppers strips, baby corn, and dress with oil, lemon juice, spices and salt.

You can slice veggies and use them as "crackers" to eat with avocado, salsa, or whatever you like.

There are a lot of raw soup recipes that you can find online.

You can "empty" whatever veggie you'd like (mushroom, pepper, onion, tomato, etc.) and make sort of a filling with ground veggies (celery, tomato, onion, carrot, peppers, mushroom, etc.). You can eat it with sliced cucumbers and avocado.

If you get a food dehydrator you can make rice which you can add veggies to.

You can always top salads with nuts; almonds, cashews, etc. Personally, I love adding raisins/craisins and a whole variety of nuts to salads. Not only do they look and taste better, but they ARE better. :)

If you eat 3 meals a day, try having a snack after breakfast and before lunch, and one between lunch and dinner. Consider making one snack fruit, such as blueberries, apple slices, an orange, etc., and the other snack have it include nuts. You can make yourself a "trail mix" with nuts, raisins/criasins, dried fruit (pinapple, papaya, or others) and whatever else you like. Personally, I think having meals more vegetable based and grain based, and snacks more fruit/nut/seeds based is good.

Are you vegan already? If you aren't this may be a hard switch. I suggest you first become 100% vegan, and over time, and SLOWLY switch to a raw diet. Juicing is a great and healthy way to enjoy a raw lifestyle. I LOVE making carrot juice, which I make with just carrots and celery and it tastes great. :) Hopefully this was helpful and enjoy! ;D
