In the hot humid summer do you like to cook?

I hate to cook hot foods when it's already hot and humid, especially healthy whole dried legumes and grains that take up to an hour!



What do you cook during hot and humid summers or if you have any limited cooking and raw food recipes let me know. Thanks.In the hot humid summer do you like to cook?
No, I do not like to cook when it is hot, even though I have air conditioning. It seems like a waste of time and energy.



Potato salad is good, pasta salad that comes in a box, three-bean salad made with olives, onions, green beans, yellow beans, and kidney beans is good with some Italian dressing in it, cold pickled beets, bacon, lettuce, and tomato sandwich, tomatoes stuffed with tuna fish salad, cucumber sandwiches with cream cheese, a little butter, and some Dill weed mixed together for the spread. I like boiled corn for a meal. There are always melons with cottage cheese which is good and cold. Just think of something you like and make it up.In the hot humid summer do you like to cook?
We don't get alot of humidity as a general rule, but we do see triple digit figures quite a bit. And, no, I don't really like cooking in the house on those days. Which is why God created the Weber Grill, I think! And probably the microwave, but I'm not sure about that one! When I do have to cook on the stove, I usually do it after the sun goes down and things cool off. I also make pasta and rice salads that can sit in the fridge overnight. If I'm making lasagne or something that is to be served hot, I'll microwave it the next day. Great recipes:



Pasta Salad



1 box rotelle pasta, cooked and cooled

1 chub hard salami, cut into cubes

1 package feta cheese

1 red bell pepper

1 bunch green onion

1 can sliced olives, drained

1 bottle Ghirards' Italian Dressing



Cut up bell pepper and onion, add to remaining ingrediants and chill.
It was 40C here today and I can tell you I sure didn't turn on the oven. Instead we had Tuna Chickpea Salad with toasted pita wedges:



2 Cans of chunk tuna (in water)-drained

2 Cans of diced tomatoes-drained

2 Cans of Chick Peas-drained, rinsed

1 Cut up red onion

Cut up cilantro (optional)

Pepper, parsley flakes, sprinkle of dill.



Mix together and serve with toasted pita bread. Healthy and cool!In the hot humid summer do you like to cook?
I tend to eat allot of raw veggies and fruit during the summer, and then my cooking is mainly different types of salads or simple things such as spaghetti :)
