What are best books on raw food (for people)? Looking for basic raw techniques.?

I am vegetarian and interested in going substantially raw. I don't need a fancy recipe book, but I want to understand raw basics. For instance how to make sauces, protein "meat" substitutes, pasta substitutions, crusts, general raw techniques and must-have ingredients. I see a lot of raw books on amazon with glossy photos and fancy recipes... not necessarily what I'm looking for. What are best books on raw food (for people)? Looking for basic raw techniques.?
I suggest you browse through Emily's website - its excellent

I don't know what the best book is but there are some wonderful websites with recipe collections.

and this forum http://www.rawfoodtalk.com/forumdisplay.鈥?/a> is where I've discovered most of my best recipes.

For spaghetti buy a spiralizer and make zucchini into long thin strands

For other pasta make ribbons out of zucchini with a potato peeler

For lasagna make long strips with a potato peeler and then layer them criss cross

For ravioli you can use the spiralizer to make round disks out of turnip

I would recommend hanging around the forum above before buying recipe books.
Hey, Emily here. I would recommend david wolfe's sunfood success diet. It gives a ridiciously complete analysis of the raw food diet. It also addresses different angles to come at a raw foods diet - athletes need a different balance of food than an inactive 55 year old, for example.

There are so many raw techniques! I've been doing it for a while now and still am learning new things. Any raw food cookbook will introduce you to these. A good cookbook, with info on techniques as well as a little extra green living ideas is Raw Food Real World. Some of the recipes are extensive, some are not. But most of the techniques are in there. Awesome book -beautiful pics. Raw by charlie trotter is the same - but completely gourmet. Some recipes take 2 weeks or more from start to finish. Ani Phyo has a cook book that is mostly quick recipes. You can open it, make things from it, and eat it within a half an hour for the most part. Therefore, her cookbook doesn't go into some of the lengthy processes as much as some.

For the most part, there isn't a meat substitute. There are some raw "burgers" out there, but that's not really a focus. You will need to research and experience eating from a different point of view. Again, I go back to david wolfe's book.

Goneraw, com has a wonderful forum and recipe access too.
